Ingredients:
– 2 tbsp olive oil
– 1 small onion, thinly sliced
– 2 bell peppers (assorted colors), sliced
– 1 zucchini, halved and sliced
– 1 cup cherry tomatoes, halved
– 2 cloves garlic, minced
– 1 can (15 oz) chickpeas, drained and rinsed
– 1 tsp cumin
– 1 tsp paprika
– Salt and pepper to taste
– Fresh parsley, chopped for garnish
Directions:
1. Heat olive oil in a large skillet over medium heat.
2. Add sliced onion and cook until softened, about 3 minutes.
3. Stir in bell peppers and zucchini, cooking for another 5 minutes until slightly tender.
4. Add cherry tomatoes and minced garlic, sauté for 2 minutes.
5. Toss in chickpeas, cumin, paprika, salt, and pepper, stirring well to combine.
6. Cook for an additional 3-4 minutes until heated through.
7. Adjust seasoning if needed.
