Aromatic Tofu Lasagna
Indulge in layers of fragrant herbs, savory tofu, and gooey cheese with this aromatic twist on classic lasagna that will have even meat-lovers coming back for seconds!

Ingredients:
– 9 lasagna noodles
– 1 block firm tofu, drained and crumbled
– 1 onion, diced
– 3 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 zucchini, sliced
– 1 cup mushrooms, sliced
– 2 cups spinach
– 1 can diced tomatoes
– 2 cups marinara sauce
– 1 tsp dried basil
– 1 tsp dried oregano
– 1/2 tsp red pepper flakes
– Salt and pepper to taste
– 2 cups shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese

Directions:
1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions, then drain and set aside.
2. In a skillet, sauté onion and garlic until fragrant. Add bell pepper, zucchini, and mushrooms, cooking until softened.
3. Stir in crumbled tofu, spinach, diced tomatoes, marinara sauce, basil, oregano, red pepper flakes, salt, and pepper. Simmer for 10 minutes.
4. In a greased baking dish, spread a layer of the tofu mixture, followed by a layer of noodles. Repeat until all ingredients are used, finishing with a layer of noodles on top.
5. Sprinkle mozzarella and Parmesan cheese over the lasagna.
6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
7. Let it rest for 10 minutes before slicing and serving.
