Bean-Free White Chicken Chili
Warm up your soul with this hearty and flavorful white chicken chili, minus the beans for a unique twist!
Ingredients:
– 1 lb boneless, skinless chicken breast, diced
– 1 tbsp olive oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 2 (4 oz) cans diced green chilies
– 32 oz chicken broth
– 1 tsp cumin
– 1 tsp dried oregano
– 1/2 tsp chili powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 8 oz cream cheese, softened
– 1 cup heavy cream
– 1 cup shredded Monterey Jack cheese
– Fresh cilantro, for garnish
Directions:
1. IIn a large pot, heat olive oil over medium heat. Add diced chicken and cook until no longer pink.
2. Add chopped onion and minced garlic, sauté until softened.
3. Stir in diced green chilies, chicken broth, cumin, oregano, chili powder, salt, and pepper. Bring to a simmer.
4. In a separate bowl, mix softened cream cheese with heavy cream until smooth. Add the mixture to the pot and stir well.
5. Simmer the chili for 10-15 minutes, stirring occasionally.
6. Just before serving, stir in shredded Monterey Jack cheese until melted.
7. Garnish with fresh cilantro and any additional cheese, if desired.
