Beef and Onion Soup

Ingredients:
– 1 lb beef stew meat, cubed
– 2 large onions, thinly sliced
– 3 cloves garlic, minced
– 4 cups beef broth
– 2 cups water
– 2 tbsp tomato paste
– 1 tsp Worcestershire sauce
– 1 tsp dried thyme
– Salt and pepper to taste
– 2 tbsp olive oil
Directions:
1. In a large pot, heat olive oil over medium-high heat. Add beef cubes and brown on all sides.
2. Add onions and garlic, sauté until softened and fragrant.
3. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for 2 minutes.
4. Pour in beef broth and water. Bring to a boil, then reduce heat and simmer for 1 hour, covered.
5. Adjust seasoning if needed and serve hot.
