Beef Tongue Braise

Ingredients:
– 24 oz beef tongue
– 4 oz beef tallow
– 2 cups bone broth
– 2 tsp salt
– 1 tsp black pepper

Directions:
1. Rinse the beef tongue under cold water and pat dry with paper towels.
2. In a large pot, heat beef tallow over medium-high heat.
3. Sear the beef tongue on all sides until browned, about 5 minutes per side.
4. Pour bone broth into the pot and season with salt and pepper.
5. Bring the liquid to a simmer, then reduce heat to low, cover, and let it braise for 3-4 hours until the beef tongue is tender.
6. Once cooked, remove the beef tongue from the pot and let it rest for 15 minutes.
7. Slice the beef tongue thinly and serve with the braising liquid.
