Beef Wellington with Mushroom Duxelles

Ingredients:
– 1 1/2 lb beef tenderloin
– 1 lb cremini mushrooms, finely chopped
– 3 shallots, minced
– 2 cloves garlic, minced
– 2 tbsp olive oil
– 1/4 cup fresh parsley, chopped
– 1 sheet puff pastry
– 2 tbsp Dijon mustard
– Salt and pepper to taste
– 1 egg, beaten for egg wash
Directions:
1. Season the beef tenderloin with salt and pepper. Sear all sides in a hot pan with olive oil. Let it cool.
2. In the same pan, sauté shallots until translucent, add garlic, then mushrooms. Cook until moisture evaporates. Stir in parsley and season.
