Black Bean and Sweet Potato Tamales with Mole Sauce

Ingredients:
– 1 cup masa harina
– 1 cup vegetable broth
– 1/2 tsp baking powder
– 1/2 tsp salt
– 1/2 cup cooked black beans
– 1/2 cup mashed sweet potato
– 1/2 tsp cumin
– 1/2 tsp chili powder
– 1/4 tsp garlic powder
– 1/4 tsp onion powder
– 1/4 cup mole sauce
– Corn husks, soaked in warm water

Directions:
1. In a mixing bowl, combine masa harina, vegetable broth, baking powder, and salt to make the tamale dough.
2. In another bowl, mix black beans, sweet potato, cumin, chili powder, garlic powder, and onion powder for the filling.
3. Spread a thin layer of tamale dough on a corn husk, add a spoonful of the black bean and sweet potato mixture, then fold and seal the tamale.
4. Steam tamales for 45-60 minutes until cooked through.
5. Serve tamales with warm mole sauce drizzled on top.
