Ingredients:
– 1 cup masa harina
– 1 cup vegetable broth
– 1/2 tsp baking powder
– 1/2 tsp salt
– 1/2 cup cooked black beans
– 1/2 cup mashed sweet potatoes
– 1/2 cup corn kernels
– 1/2 cup shredded cheese
– 2 poblano peppers, roasted, peeled, and seeded
– 1/2 cup sour cream
– 1/4 cup cilantro leaves
– 1/2 lime, juiced
– Salt and pepper to taste

Directions:
1. In a mixing bowl, combine masa harina, vegetable broth, baking powder, and salt. Mix until a dough forms.
2. In a separate bowl, mix black beans, sweet potatoes, corn, and cheese.
3. Spread masa dough onto corn husks, add a spoonful of the bean mixture, then fold and seal the tamales.
4. Steam tamales for 45-60 minutes until cooked through.
5. In a blender, combine roasted poblanos, sour cream, cilantro, lime juice, salt, and pepper. Blend until smooth.
6. Serve tamales with poblano sauce drizzled on top.
