Blueberry Lemonade Ice Cream Sandwiches

Ingredients:
10 oz fresh blueberries
1/4 cup sugar
1/4 cup water
1 tbsp lemon zest
1 cup vanilla ice cream
12 graham crackers
Directions:
1. In a saucepan, combine blueberries, sugar, water, and lemon zest. Cook over medium heat, stirring occasionally, until blueberries burst and mixture thickens (about 10 minutes). Let it cool.
2. Take a graham cracker and spread a scoop of vanilla ice cream on it. Top with a spoonful of the blueberry mixture.
3. Sandwich with another graham cracker on top. Repeat for the remaining crackers.
4. Freeze the sandwiches for at least 2 hours until firm.
