Braised Lamb Shanks with Spring Vegetables
Celebrate the flavors of spring with tender braised lamb shanks and vibrant seasonal vegetables in this hearty and comforting dish!
Ingredients:
– 4 lamb shanks
– 2 tbsp olive oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 2 carrots, peeled and diced
– 2 stalks celery, diced
– 1 cup chicken broth
– 1 cup cherry tomatoes
– 1 cup peas
– 1 tsp dried thyme
– Salt and pepper to taste
Directions:
1. Season the lamb shanks with salt and pepper. In a large skillet, heat olive oil over medium-high heat and brown the lamb shanks on all sides. Remove and set aside.
2. In the same skillet, sauté onions and garlic until softened. Add carrots and celery, cooking for another 5 minutes.
3. Return the lamb shanks to the skillet and pour in the chicken broth. Add cherry tomatoes and dried thyme. Cover and simmer on low heat for 2 hours until the lamb is tender.
4. Add peas to the skillet and cook for an additional 10 minutes. Adjust seasoning with salt and pepper.
5. Serve the braised lamb shanks with spring vegetables hot, garnished with fresh herbs if desired.
