Ingredients:
– 2 large eggs
– 1/2 cup almond flour
– 1/4 tsp baking powder
– 1/4 tsp garlic powder
– 1/4 tsp onion powder
– 1/4 tsp sea salt
– 1/4 cup diced bell peppers
– 1/4 cup diced mushrooms
– 1/4 cup diced spinach
– 2 slices sugar-free bacon, cooked
– 1/4 avocado, sliced
– Fresh parsley for garnish

Directions:
1. Preheat a mini waffle maker according to manufacturer’s instructions.
2. In a bowl, whisk together eggs, almond flour, baking powder, garlic powder, onion powder, and salt until well combined.
3. Stir in bell peppers, mushrooms, and spinach.
4. Pour half of the batter into the waffle maker and close the lid. Cook for 3-4 minutes or until golden brown and cooked through. Repeat with the remaining batter.
5. Assemble the chaffle sandwiches by placing bacon and avocado slices between two chaffles.
6. Garnish with fresh parsley and serve warm.
