Butter-Poached Lobster

Ingredients:
– 2 lobster tails (6 oz each)
– 8 tbsp unsalted butter
– 2 cloves garlic, crushed
– 2 sprigs fresh thyme
– Sea salt, to taste
– Black pepper, to taste

Directions:
1. Using kitchen shears, cut the top of the lobster shell lengthwise and pull the shell open slightly.
2. Gently remove the lobster meat from the shell, keeping it attached at the base of the tail.
3. Melt butter in a saucepan over low heat, then add garlic and thyme.
4. Add the lobster tails to the butter mixture, ensuring they are fully submerged.
5. Poach the lobster tails for 8-10 minutes, basting them with the butter occasionally.
6. Season with salt and pepper to taste.
7. Remove the lobster tails from the butter and serve hot.
8. Optionally, drizzle with extra butter before serving.
