Cajun-Spiced Seafood Boil with Spring Vegetables

Ingredients:
– 1 lb shrimp, peeled and deveined
– 1 lb mussels, cleaned and debearded
– 1 lb baby red potatoes, halved
– 2 ears of corn, shucked and cut into thirds
– 1 lb asparagus, trimmed
– 1 lemon, sliced
– 4 cloves garlic, minced
– 2 tbsp Cajun seasoning
– 1/4 cup butter, melted
– Salt and pepper to taste

Directions:
1. In a large pot, bring water to a boil and add Cajun seasoning, garlic, salt, and pepper.
2. Add potatoes and cook for 10 minutes, then add corn and asparagus. Cook for an additional 5 minutes.
3. Toss in shrimp, mussels, and lemon slices. Cook until shrimp are pink and mussels have opened, about 5-7 minutes.
4. Drain the seafood and veggies, then toss with melted butter.
5. Serve hot and enjoy the spicy flavors of the Cajun seafood boil.
