Celebration Surf and Turf Platter

Ingredients:
– 8 oz grass-fed beef tenderloin
– 8 oz wild-caught shrimp, peeled and deveined
– 1 tbsp coconut oil
– 2 cloves garlic, minced
– 1 tsp fresh ginger, grated
– 1 zucchini, sliced into rounds
– 1 yellow bell pepper, sliced
– 1 cup cherry tomatoes
– 1 lemon, sliced
– Fresh parsley for garnish
– Salt and pepper to taste
Directions:
1. Season beef tenderloin with salt and pepper.
2. In a skillet, heat coconut oil over medium-high heat and sear beef for 3-4 minutes per side for medium-rare. Remove and let rest.
3. In the same skillet, add garlic and ginger, then sauté shrimp until pink and cooked through. Remove and set aside.
4. In the skillet, add zucchini, bell pepper, and cherry tomatoes. Sauté until vegetables are tender.
5. Slice beef and arrange on a platter with shrimp, sautéed vegetables, and lemon slices.
6. Garnish with fresh parsley and season with additional salt and pepper if desired.
