Chicken Adobo
Experience the perfect blend of tangy and savory flavors in this classic Filipino dish that will tantalize your taste buds!

Ingredients:
– 2 lbs bone-in chicken pieces
– 1 cup soy sauce
– 1 cup vinegar
– 1 cup water
– 4 cloves garlic, minced
– 1 onion, sliced
– 3 bay leaves
– 1 tsp whole peppercorns
– 2 tbsp brown sugar
– 2 tbsp vegetable oil

Directions:
1. In a large bowl, combine soy sauce, vinegar, water, garlic, onion, bay leaves, peppercorns, and brown sugar. Add chicken pieces, ensuring they are fully submerged. Marinate for at least 1 hour, preferably overnight.
2. In a Dutch oven or deep skillet, heat vegetable oil over medium-high heat. Remove chicken from marinade (reserve marinade) and brown pieces on all sides.
3. Pour the marinade over the chicken and bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes until chicken is tender and cooked through.
4. Uncover and increase heat to medium-high to thicken the sauce, stirring occasionally, for about 10 minutes.
5. Serve hot over steamed rice, spooning sauce over the chicken. Enjoy the savory goodness!
