Chicken and Spinach Lasagna
This wholesome and cheesy Chicken and Spinach Lasagna is a comforting twist on traditional lasagna recipes, perfect for a cozy family dinner.
Ingredients:
– 9 lasagna noodles
– 1 lb cooked chicken, shredded
– 10 oz frozen chopped spinach, thawed and drained
– 15 oz ricotta cheese
– 1 cup grated Parmesan cheese
– 2 cups shredded mozzarella cheese
– 1 tsp garlic powder
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 24 oz marinara sauce
Directions:
1. Preheat the oven to 375°F (190°C). Cook lasagna noodles according to package instructions, then drain and set aside.
2. In a bowl, combine shredded chicken, chopped spinach, ricotta cheese, 1/2 cup Parmesan cheese, 1 cup mozzarella cheese, garlic powder, oregano, salt, and pepper.
3. Spread 1/2 cup of marinara sauce on the bottom of a 9×13-inch baking dish. Place 3 cooked lasagna noodles over the sauce.
4. Layer half of the chicken and spinach mixture over the noodles, then top with 1 cup of marinara sauce. Repeat layers.
5. Finish with the remaining 3 lasagna noodles, 1/2 cup of marinara sauce, 1 cup of mozzarella cheese, and 1/2 cup of Parmesan cheese.
6. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 25 minutes until bubbly and golden.
7. Let it rest for 10 minutes before slicing and serving.
