Chicken and Vegetable Curry

Ingredients:
– 1 lb chicken breast, diced
– 2 tbsp vegetable oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tbsp ginger, grated
– 2 tbsp curry powder
– 1 tsp turmeric
– 1 can (14 oz) coconut milk
– 1 cup chicken broth
– 2 carrots, sliced
– 1 bell pepper, diced
– 1 cup green beans
– Salt and pepper to taste
– Fresh cilantro for garnish
Directions:
1. In a large pot, heat vegetable oil over medium heat. Add diced chicken and cook until browned. Remove chicken and set aside.
2. In the same pot, sauté onion, garlic, and ginger until softened.
3. Stir in curry powder and turmeric, cooking for another minute until fragrant.
4. Pour in coconut milk and chicken broth, stirring to combine. Bring to a simmer.
5. Add carrots, bell pepper, and green beans. Simmer for 15-20 minutes until vegetables are tender.
6. Return cooked chicken to the pot and simmer for an additional 5 minutes. Season with salt and pepper.
7. Serve hot over steamed rice, garnished with fresh cilantro.
