Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Oil for frying

For the Waffles:

  • 2 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 large eggs, separated
  • 2 cups buttermilk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Marinate chicken overnight in buttermilk mixture
  2. Prepare waffle batter, let rest 30 minutes
  3. Heat oil to 350°F
  4. Mix flour and seasonings for chicken coating
  5. Double-dredge chicken pieces
  6. Fry until golden brown and 165°F internal
  7. Make waffles according to iron instructions
  8. Serve immediately with maple syrup
