Citrus Glazed Spring Chicken with Fennel
Brighten up your dinner table with this zesty and aromatic chicken dish that’s perfect for welcoming the spring season!

Ingredients:
– 4 boneless, skinless chicken breasts (6 oz each)
– 2 tablespoons olive oil
– 1 fennel bulb, thinly sliced
– 1 orange, zested and juiced
– 2 tablespoons honey
– 2 cloves garlic, minced
– Salt and pepper to taste

Directions:
1. Preheat the oven to 375°F (190°C).
2. Season the chicken breasts with salt and pepper on both sides.
3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Remove the chicken and set aside.
4. In the same skillet, add fennel slices and cook for 2-3 minutes until slightly softened.
5. Stir in garlic, orange zest, orange juice, and honey. Let it simmer for 1-2 minutes.
6. Return the chicken to the skillet, spooning the glaze over the top.
7. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked through.
8. Serve the chicken with the glazed fennel on top.
