Coconut Curry Vegetable Stew with Fresh Cilantro

Ingredients:
– 1 tbsp coconut oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 red bell pepper, sliced
– 2 carrots, sliced
– 1 zucchini, diced
– 1 cup cauliflower florets
– 1 can (14 oz) coconut milk
– 2 tbsp red curry paste
– 1 cup vegetable broth
– 1 tbsp soy sauce
– 1 tsp brown sugar
– Salt and pepper to taste
– Fresh cilantro, chopped for garnish

Directions:
1. In a large pot, heat coconut oil over medium heat. Add onion and garlic, sauté until fragrant.
2. Add bell pepper, carrots, zucchini, and cauliflower. Cook for 5 minutes.
3. Stir in coconut milk, red curry paste, vegetable broth, soy sauce, brown sugar, salt, and pepper. Bring to a simmer.
4. Reduce heat and let it simmer for 15-20 minutes until vegetables are tender.
5. Taste and adjust seasoning if needed.
6. Serve hot, garnished with fresh cilantro.
