Cognac-Poached Lobster Tails with Tarragon Butter
Indulge in the luxurious flavors of tender lobster tails poached in Cognac and served with a fragrant tarragon butter sauce.
Ingredients:
– 4 lobster tails (6 oz each), shells split
– 1 cup Cognac
– 1/2 cup unsalted butter
– 2 tbsp fresh tarragon, chopped
– Salt and pepper to taste
Directions:
1. In a large skillet, place the lobster tails shell side down. Pour the Cognac over the lobster tails.
2. Cover and poach over low heat for about 8-10 minutes until the lobster meat is opaque.
3. Remove the lobster tails from the skillet and set aside. Strain and reserve the Cognac.
4. In the same skillet, melt the butter over low heat. Add the tarragon, reserved Cognac, salt, and pepper. Cook for 2-3 minutes.
5. Place the lobster tails on serving plates and pour the tarragon butter sauce over them.
6. Garnish with additional tarragon leaves if desired and serve hot.
