Crab Cakes with Mango-Jalapeño Salsa
These crispy crab cakes are perfectly complemented by the sweet and spicy kick of mango-jalapeño salsa, creating a flavor explosion in every bite!
Ingredients:
– 16 oz lump crab meat
– 1/2 cup breadcrumbs
– 1/4 cup mayonnaise
– 1 egg
– 1 tbsp Dijon mustard
– 1/4 cup chopped fresh parsley
– 1/2 tsp Old Bay seasoning
– Salt and pepper to taste
– 1 mango, diced
– 1 jalapeño, seeded and diced
– 1/4 cup red onion, finely chopped
– Juice of 1 lime
– 2 tbsp chopped fresh cilantro
– Salt to taste
Directions:
1. In a bowl, combine crab meat, breadcrumbs, mayonnaise, egg, Dijon mustard, parsley, Old Bay seasoning, salt, and pepper. Mix until well combined.
2. Form the mixture into crab cakes and place them on a baking sheet. Refrigerate for 30 minutes to set.
3. Preheat a skillet over medium heat and add oil. Cook crab cakes for 4-5 minutes per side until golden brown and cooked through.
4. In a separate bowl, mix mango, jalapeño, red onion, lime juice, cilantro, and salt to make the salsa.
5. Serve the crab cakes topped with mango-jalapeño salsa.
