Spice up your Taco Tuesday with these crispy cauliflower buffalo tacos topped with creamy avocado ranch for a flavorful vegetarian twist on a classic favorite!

Ingredients:
– 1 head cauliflower, cut into florets
– 1 cup all-purpose flour
– 1 cup milk (or plant-based milk for vegan option)
– 1 cup breadcrumbs
– 1 cup buffalo sauce
– 8 small flour tortillas
– 1 avocado
– 1/2 cup Greek yogurt (or dairy-free yogurt)
– 1/4 cup fresh cilantro, chopped
– 1 lime, juiced
– Salt and pepper to taste
– Optional toppings: shredded lettuce, diced tomatoes, sliced jalapeños

Directions:
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In three separate bowls, place flour, milk, and breadcrumbs.
3. Dip each cauliflower floret into the flour, then milk, and finally coat in breadcrumbs. Place on the prepared baking sheet.
