Crispy Cauliflower Buffalo Wraps with Celery Slaw
These spicy, crispy cauliflower wraps with a cool and crunchy celery slaw are a flavor explosion that will make you forget all about meat!
Ingredients:
– 1 head cauliflower, cut into florets
– 1 cup all-purpose flour
– 1 cup milk (or plant-based milk for vegan option)
– 1 cup panko breadcrumbs
– 1 cup buffalo sauce
– 8 large flour tortillas
– 2 cups shredded lettuce
– 1 cup diced celery
– 1/2 cup mayonnaise (or vegan mayo)
– 1 tbsp apple cider vinegar
– Salt and pepper to taste
Directions:
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In three separate bowls, place flour, milk, and panko breadcrumbs.
3. Dip each cauliflower floret into the flour, then the milk, and finally coat with breadcrumbs. Place on the baking sheet.
4. Bake cauliflower for 20-25 minutes until crispy.
5. In a bowl, mix buffalo sauce with baked cauliflower until well coated.
6. In another bowl, combine shredded lettuce, diced celery, mayonnaise, apple cider vinegar, salt, and pepper to make the slaw.
7. Warm the flour tortillas and fill each with buffalo cauliflower and celery slaw.
8. Roll up the wraps, slice in half, and serve hot.
