- 1 lb kielbasa, sliced
- 2 cups sauerkraut, drained and rinsed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 apple, peeled and diced
- 2 cups potatoes, peeled and diced
- 1 cup chicken broth
- 1 tbsp brown sugar
- 1 tsp caraway seeds (optional)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Kielbasa: In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the kielbasa and set it aside.
- Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes. Add the diced apple and potatoes, cooking for another 5 minutes until slightly softened.
- Combine Ingredients: In a large bowl, mix the sauerkraut, chicken broth, brown sugar, and caraway seeds (if using). Add the sautéed vegetables and kielbasa, stirring to combine. Season with salt and pepper.
- Bake Casserole: Transfer the mixture to a baking dish. Cover with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the potatoes are tender.
- Serve: Let the casserole cool for a few minutes before serving.
Notes
- You can adjust the sweetness by adding more or less brown sugar.
- For a spicier version, add a pinch of red pepper flakes.
