Ingredients

  • 1 lb kielbasa, sliced
  • 2 cups sauerkraut, drained and rinsed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 apple, peeled and diced
  • 2 cups potatoes, peeled and diced
  • 1 cup chicken broth
  • 1 tbsp brown sugar
  • 1 tsp caraway seeds (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Kielbasa: In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the kielbasa and set it aside.
  3. Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes. Add the diced apple and potatoes, cooking for another 5 minutes until slightly softened.
  4. Combine Ingredients: In a large bowl, mix the sauerkraut, chicken broth, brown sugar, and caraway seeds (if using). Add the sautéed vegetables and kielbasa, stirring to combine. Season with salt and pepper.
  5. Bake Casserole: Transfer the mixture to a baking dish. Cover with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the potatoes are tender.
  6. Serve: Let the casserole cool for a few minutes before serving.

Notes

  • You can adjust the sweetness by adding more or less brown sugar.
  • For a spicier version, add a pinch of red pepper flakes.
