Easter Lemon Curd Cheesecake with Fresh Berries
This zesty and creamy cheesecake is a delightful Easter treat that bursts with the freshness of lemon and berries!

Ingredients:
– 1 1/2 cups graham cracker crumbs
– 1/3 cup sugar
– 1/2 cup unsalted butter, melted
– 16 oz cream cheese, softened
– 1 cup sugar
– 3 eggs
– 1 cup lemon curd
– 1 tsp vanilla extract
– 1 cup fresh mixed berries (such as strawberries, blueberries, and raspberries)

Directions:
1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
2. In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into the bottom of the prepared pan.
3. In a separate bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
4. Mix in lemon curd and vanilla extract until fully incorporated.
5. Pour the cream cheese mixture over the crust. Bake for 55-60 minutes or until the center is almost set.
6. Cool the cheesecake completely, then refrigerate for at least 4 hours.
7. Before serving, top with fresh mixed berries.
