Easter Prime Rib Roast with Red Wine Au Jus
Celebrate Easter with a show-stopping Prime Rib Roast served with a luxurious Red Wine Au Jus that will impress all your guests!
Ingredients:
– 5 lbs prime rib roast
– 2 tbsp olive oil
– 1 tbsp salt
– 1 tbsp black pepper
– 4 cups beef broth
– 1 cup red wine
– 2 sprigs fresh rosemary
– 4 cloves garlic, smashed
– 2 tbsp all-purpose flour
Directions:
1. Preheat oven to 450°F (230°C). Rub prime rib with olive oil, salt, and pepper. Place in a roasting pan fat side up.
2. Roast for 15 minutes, then reduce heat to 325°F (160°C) and continue roasting for about 2 hours or until a meat thermometer reads 135°F (57°C) for medium-rare.
3. Let the roast rest tented with foil for 20 minutes before slicing.
4. For the au jus, in a saucepan, combine beef broth, red wine, rosemary, and garlic. Simmer for 15-20 minutes.
5. In a small bowl, mix flour with 1/4 cup of water to create a slurry. Whisk into the simmering liquid until thickened.
6. Strain the au jus and serve with the sliced prime rib.
