Fresh Herb and Lemon Roasted Chicken Thighs
Elevate your weeknight dinner with these succulent chicken thighs bursting with fresh herbs and zesty lemon flavors!

Ingredients:
– 6 bone-in, skin-on chicken thighs
– 2 tbsp olive oil
– 2 tbsp fresh rosemary, chopped
– 2 tbsp fresh thyme, chopped
– 2 tbsp fresh parsley, chopped
– 2 cloves garlic, minced
– Zest of 1 lemon
– Juice of 1 lemon
– Salt and pepper to taste

Directions:
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a small bowl, combine olive oil, rosemary, thyme, parsley, garlic, lemon zest, lemon juice, salt, and pepper.
3. Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet.
4. Rub the herb and lemon mixture evenly over the chicken thighs, ensuring they are well coated.
5. Roast in the preheated oven for 30-35 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
6. Remove from the oven and let rest for 5 minutes before serving.
