Garlic Butter Scallops with Pea Puree
Elevate your dinner game with succulent scallops seared to perfection in garlic butter, served atop a vibrant and velvety pea puree.
Ingredients:
– 12 large sea scallops
– 4 tbsp unsalted butter
– 4 cloves garlic, minced
– 16 oz frozen peas, thawed
– 1/4 cup chicken or vegetable broth
– Salt and pepper to taste
– Fresh parsley, for garnish
Directions:
1. Pat dry the scallops with paper towels and season both sides with salt and pepper.
2. In a large skillet over medium-high heat, melt 2 tbsp of butter. Add scallops and sear for 2-3 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
3. In the same skillet, melt the remaining 2 tbsp of butter. Add minced garlic and sauté for 1 minute until fragrant.
4. Add the thawed peas and broth to the skillet. Cook for 3-4 minutes until the peas are heated through.
5. Transfer the pea mixture to a blender and blend until smooth. Season with salt and pepper.
6. To serve, spoon the pea puree onto plates and top with seared scallops. Garnish with fresh parsley.
