Garlic-Herb Crusted Prime Rib with Horseradish Cream
Impress your guests with this succulent prime rib coated in a flavorful garlic-herb crust and served with a zesty horseradish cream!

Ingredients:
– 5 lbs prime rib roast
– 4 cloves garlic, minced
– 2 tbsp fresh rosemary, chopped
– 2 tbsp fresh thyme, chopped
– 2 tbsp olive oil
– Salt and pepper to taste
– 1 cup sour cream
– 2 tbsp prepared horseradish
– 1 tbsp Dijon mustard
– 1 tbsp lemon juice

Directions:
1. Preheat oven to 450°F (230°C). Pat the prime rib dry with paper towels.
2. In a bowl, mix minced garlic, rosemary, thyme, olive oil, salt, and pepper. Rub the mixture all over the prime rib.
3. Place the prime rib on a roasting pan and roast in the oven for 15 minutes. Reduce heat to 325°F (165°C) and continue roasting for about 2 hours or until internal temperature reaches 135°F (57°C) for medium-rare.
4. While the prime rib cooks, mix sour cream, horseradish, Dijon mustard, and lemon juice in a bowl. Season with salt and pepper. Refrigerate until ready to serve.
5. Once cooked, remove the prime rib from the oven, tent with foil, and let it rest for 20 minutes before slicing.
6. Serve the sliced prime rib with the horseradish cream on the side.
