– 1 cup (226g) unsalted butter, softened
– 1 cup (200g) granulated sugar
– 1/2 cup (100g) brown sugar
– 2 large eggs
– 1 tbsp fresh orange zest
– 1 tsp vanilla extract
– 2 1/2 cups (300g) all-purpose flour
– 1 tsp baking soda
– 1/2 tsp salt
– 1 tbsp ground ginger
– 1/2 cup (60g) chopped crystallized ginger
– Additional granulated sugar for rolling

Directions:
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in eggs one at a time, then stir in orange zest and vanilla extract.
4. In a separate bowl, whisk together flour, baking soda, salt, and ground ginger.
5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in crystallized ginger.
6. Roll dough into 1-inch balls, then roll in granulated sugar to coat.
7. Place the cookies on the prepared baking sheet and gently flatten each with a fork.
8. Bake for 10-12 minutes or until the edges are lightly golden.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
