Greek Chickpea Salad
Indulge in a burst of Mediterranean flavors with this refreshing and protein-packed Greek Chickpea Salad.

Ingredients:
– 15 oz can chickpeas, drained and rinsed
– 1 cucumber, diced
– 1 cup cherry tomatoes, halved
– 1/2 red onion, thinly sliced
– 1/4 cup Kalamata olives, pitted and chopped
– 4 oz feta cheese, crumbled
– 1/4 cup fresh parsley, chopped
– 2 tbsp olive oil
– 2 tbsp lemon juice
– 1 tsp dried oregano
– Salt and pepper to taste

Directions:
1. In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, olives, feta cheese, and parsley.
2. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
3. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
4. Chill the Greek Chickpea Salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
5. Serve cold as a side dish or a light main meal, garnished with extra feta and parsley if desired.
