Green Goddess Egg White Bites
These Green Goddess Egg White Bites are a verdant delight, packed with fresh, vibrant flavors that will transport you to a Paleo paradise!
Ingredients:
– 8 oz egg whites
– 1/4 cup spinach, finely chopped
– 1/4 cup kale, finely chopped
– 1/4 cup green onions, chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup coconut milk
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– Salt and pepper to taste
– Cooking spray
Directions:
1. Preheat oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray.
2. In a bowl, whisk together egg whites, spinach, kale, green onions, parsley, coconut milk, garlic powder, onion powder, salt, and pepper.
3. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
4. Bake for 20-25 minutes until the egg whites are set and slightly golden on top.
5. Allow the egg white bites to cool slightly before removing from the tin.
