Grilled Jumbo Shrimp with Romesco Sauce

Ingredients:
– 1 lb jumbo shrimp, peeled and deveined
– 1 red bell pepper, roasted and peeled
– 1/2 cup almonds, toasted
– 2 garlic cloves
– 2 tbsp tomato paste
– 2 tbsp red wine vinegar
– 1/4 cup extra-virgin olive oil
– Salt and pepper to taste
Directions:
1. Preheat the grill to medium-high heat.
2. In a food processor, combine the roasted red pepper, almonds, garlic, tomato paste, and red wine vinegar. Pulse until smooth.
3. With the processor running, slowly drizzle in the olive oil until the sauce is well combined. Season with salt and pepper.
4. Season the shrimp with salt and pepper, then grill for 2-3 minutes per side until cooked through.
5. Serve the grilled shrimp with a dollop of Romesco sauce on top.
