Grilled Spatchcock Chicken with Herb Butter
Impress your guests with this flavorful and juicy grilled spatchcock chicken slathered in aromatic herb butter!
Ingredients:
– 1 whole chicken, spatchcocked
– 4 oz unsalted butter, softened
– 2 tbsp fresh parsley, chopped
– 1 tbsp fresh rosemary, minced
– 1 tbsp fresh thyme leaves
– 2 cloves garlic, minced
– Salt and black pepper, to taste
– Zest of 1 lemon
Directions:
1. Preheat the grill to medium-high heat.
2. In a bowl, mix together the softened butter, parsley, rosemary, thyme, garlic, lemon zest, salt, and pepper until well combined.
3. Gently loosen the skin of the spatchcocked chicken and evenly spread the herb butter underneath the skin.
4. Rub any remaining herb butter on the skin of the chicken and season generously with salt and pepper.
5. Place the chicken on the grill, skin-side down, and cook for about 10-12 minutes per side or until the internal temperature reaches 165°F (74°C).
6. Remove from the grill and let the chicken rest for 10 minutes before carving.
