Grilled Spatchcock Chicken with Herb Chimichurri

Ingredients:
– 1 whole chicken, spatchcocked
– 1/4 cup olive oil
– 2 cloves garlic, minced
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh cilantro, chopped
– 1/4 cup fresh oregano, chopped
– 2 tbsp red wine vinegar
– 1/2 tsp red pepper flakes
– Salt and pepper to taste

Directions:
1. Preheat the grill to medium-high heat.
2. In a bowl, combine olive oil, garlic, parsley, cilantro, oregano, red wine vinegar, red pepper flakes, salt, and pepper to make the chimichurri sauce.
3. Season the spatchcocked chicken generously with salt and pepper.
4. Grill the chicken skin-side down for 15-20 minutes, then flip and continue grilling until the internal temperature reaches 165°F (74°C).
5. Rest the chicken for 10 minutes before carving.
6. Serve the grilled spatchcock chicken with a generous drizzle of herb chimichurri sauce on top.
