Grilled Vegetable Quesadillas
Elevate your quesadilla game with these flavorful grilled vegetable-filled delights!
Ingredients:
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 red onion, sliced
1 cup corn kernels
1 cup shredded cheddar cheese
4 large flour tortillas
2 tbsp olive oil
Salt and pepper to taste
Optional: salsa, sour cream, guacamole for serving
Directions:
1. Preheat grill to medium-high heat. Toss bell peppers, zucchini, red onion, and corn with olive oil, salt, and pepper.
2. Grill the vegetables until charred and tender, about 5-7 minutes per side. Remove from heat and chop into smaller pieces.
3. Place a tortilla on a flat surface. Sprinkle a quarter of the cheese over half of the tortilla.
4. Spread a quarter of the grilled vegetables over the cheese, then fold the tortilla in half.
5. Repeat with remaining tortillas and filling.
6. Heat a large skillet over medium heat. Cook each quesadilla for 2-3 minutes per side until cheese is melted and tortilla is crispy.
7. Cut each quesadilla into wedges and serve hot with salsa, sour cream, and guacamole.
