Harissa Roasted Sweet Potatoes with Herb Tahini

Ingredients:
– 2 large sweet potatoes, diced into cubes
– 2 tbsp olive oil
– 2 tbsp harissa paste
– Salt and pepper to taste
– 1/4 cup tahini
– 2 tbsp fresh lemon juice
– 1 garlic clove, minced
– 1/4 cup fresh parsley, chopped
– 2 tbsp fresh mint, chopped
– Water, as needed
Directions:
