Herb-Crusted Beef Tenderloin with Cognac Sauce

– 2 tbsp Dijon mustard
– 1 cup breadcrumbs

– Salt and pepper to taste
– 1 cup beef broth
– 1/4 cup cognac
– 2 tbsp butter
– 1 shallot, minced
– 1/2 cup heavy cream
Directions:
1. Preheat the oven to 400°F (200°C).
2. Season the beef tenderloin with salt and pepper, then coat with Dijon mustard.
3. In a bowl, mix breadcrumbs, rosemary, thyme, salt, and pepper. Press the mixture onto the beef to create a crust.
4. Heat olive oil in an oven-safe skillet over high heat. Sear the beef on all sides until golden brown.
5. Transfer the skillet to the oven and roast for about 20-25 minutes or until desired doneness.
6. Remove the beef from the skillet and let it rest.
7. In the same skillet, sauté shallot in butter until translucent.
8. Deglaze the skillet with cognac, scraping up any browned bits.
9. Add beef broth and simmer until reduced by half.
10. Stir in heavy cream and simmer until the sauce thickens.
11. Slice the beef tenderloin and serve with the cognac sauce.
