Herb-Crusted Rack of Lamb with Mint Chimichurri
Impress your guests with this succulent herb-crusted rack of lamb paired with a refreshing mint chimichurri sauce!

Ingredients:
– 2 racks of lamb, frenched
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 2 tbsp fresh rosemary, chopped
– 2 tbsp fresh thyme, chopped
– Salt and pepper to taste
– Mint Chimichurri:
– 1 cup fresh mint leaves
– 1 cup fresh parsley
– 2 cloves garlic
– 1/4 cup red wine vinegar
– 1/2 cup olive oil
– Salt and pepper to taste

Directions:
1. Preheat the oven to 400°F (200°C). Season the lamb with salt and pepper.
2. In a bowl, mix olive oil, minced garlic, chopped rosemary, and thyme. Rub this mixture over the lamb racks.
3. Sear the lamb in a hot skillet until browned on all sides, then transfer to a baking dish and roast in the oven for about 20-25 minutes for medium-rare.
4. Meanwhile, prepare the mint chimichurri by blending mint, parsley, garlic, red wine vinegar, and olive oil in a food processor. Season with salt and pepper.
5. Let the lamb rest for a few minutes before slicing and serving with the mint chimichurri sauce.
