Herb-Crusted Rack of Lamb with Mint Pesto

Ingredients:
– 2 racks of lamb, frenched
– 1 cup breadcrumbs
– 1/4 cup fresh parsley, chopped
– 2 tbsp fresh rosemary, minced
– 2 cloves garlic, minced
– Salt and pepper to taste
– 1/4 cup olive oil
– 1 cup fresh mint leaves
– 1/4 cup pine nuts
– 1/4 cup grated Parmesan cheese
– 1/2 cup olive oil
– 1 tbsp lemon juice

Directions:
1. Preheat the oven to 400°F (200°C). Season the racks of lamb with salt and pepper.
2. In a bowl, combine breadcrumbs, parsley, rosemary, garlic, salt, pepper, and olive oil. Press this mixture onto the lamb racks.
3. Roast the lamb in the oven for 20-25 minutes for medium-rare doneness.
4. While the lamb cooks, make the mint pesto by blending mint leaves, pine nuts, Parmesan, olive oil, and lemon juice until smooth. Season with salt and pepper.
5. Let the lamb rest for 10 minutes before slicing and serving with the mint pesto.
