Herb-Crusted Rack of Lamb with Mint Sauce

Ingredients:
– 2 racks of lamb, about 1.5 lbs each
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 tbsp fresh rosemary, chopped
– 1 tbsp fresh thyme, chopped
– Salt and pepper to taste
– 1 cup fresh mint leaves
– 1/4 cup red wine vinegar
– 1/4 cup honey
– 1/4 cup water
Directions:
1. Preheat the oven to 400°F (200°C). Season the racks of lamb with salt and pepper.
2. In a bowl, mix olive oil, minced garlic, rosemary, and thyme. Rub this mixture over the lamb racks.
3. Place the racks on a baking sheet and roast in the oven for 20-25 minutes for medium-rare doneness.
4. While the lamb cooks, make the mint sauce. In a blender, combine mint leaves, red wine vinegar, honey, and water. Blend until smooth. Season with salt to taste.
5. Let the lamb rest for 5 minutes before slicing into individual chops. Serve with the mint sauce on the side.
