Herb-Crusted Standing Rib Roast

Ingredients:
– 5 lbs standing rib roast
– 2 tbsp olive oil
– 2 tbsp Dijon mustard
– 2 tbsp minced fresh rosemary
– 1 tbsp minced fresh thyme
– 1 tbsp minced fresh parsley
– 4 cloves garlic, minced
– Salt and pepper to taste

Directions:
1. Preheat the oven to 450°F (230°C). Place the standing rib roast in a roasting pan.
2. In a bowl, mix together olive oil, Dijon mustard, minced herbs, garlic, salt, and pepper to form a paste.
3. Rub the herb paste all over the standing rib roast, ensuring it’s evenly coated.
4. Roast the meat in the preheated oven for 15 minutes, then reduce the heat to 325°F (165°C) and continue roasting for about 2 hours or until a meat thermometer reads your desired doneness.
5. Remove the roast from the oven, cover loosely with foil, and let it rest for 20 minutes before carving.
6. Slice and serve the herb-crusted standing rib roast with your favorite sides.
