Indian Butter Chicken with Cauliflower Rice
Experience the aromatic and wholesome flavors of traditional Indian Butter Chicken with a paleo twist using cauliflower rice as the perfect grain-free accompaniment!

Ingredients:
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 cup full-fat coconut milk
– 3 tbsp ghee
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1-inch ginger, grated
– 1 tsp ground turmeric
– 1 tsp ground cumin
– 1 tsp ground coriander
– 1/2 tsp cayenne pepper
– Salt and pepper to taste
– Fresh cilantro, for garnish
– 1 head cauliflower, riced

Directions:
1. In a large skillet, melt ghee over medium heat. Add onions, garlic, and ginger, sauté until softened.
2. Add chicken pieces to the skillet and brown on all sides.
3. Sprinkle the spices over the chicken and stir to combine.
4. Pour in the coconut milk, reduce heat, and simmer for 15-20 minutes until the chicken is cooked through and the sauce has thickened.
5. Season with salt and pepper, adjust the spices if needed.
6. In a separate pan, sauté the cauliflower rice in a little ghee until tender.
7. Serve the butter chicken over the cauliflower rice, garnished with fresh cilantro.
