Indulge in the vibrant flavors of this ancestral-inspired Japanese Salmon Poke Bowl, featuring fresh, wild-caught salmon and a bed of cauliflower rice for a wholesome twist on a classic favorite!

Ingredients:
– 8 oz fresh wild-caught salmon, cubed
– 1/4 cup coconut aminos
– 1 tbsp sesame oil
– 1 tsp rice vinegar
– 1/2 avocado, sliced
– 1/2 cucumber, julienned
– 1/4 cup shredded carrots
– 2 green onions, thinly sliced
– 1 tbsp sesame seeds
– 4 cups cauliflower rice
– 1 tbsp olive oil
– Salt and pepper to taste

Directions:
1. In a bowl, combine coconut aminos, sesame oil, and rice vinegar. Add salmon cubes, toss gently to coat, and marinate in the fridge for 15-30 minutes.
2. Heat olive oil in a pan over medium heat. Add cauliflower rice, season with salt and pepper, and sauté until tender, about 5-7 minutes.
3. Assemble bowls with cauliflower rice at the base, topped with marinated salmon, avocado slices, cucumber, carrots, green onions, and sesame seeds.
4. Drizzle any remaining marinade over the bowls and serve fresh.
