Ingredients:
– 2 large artichokes
– 16 oz sweet potatoes, peeled and cubed
– 2 tbsp coconut oil
– 1/2 cup almond flour
– 1/4 cup nutritional yeast
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– Salt and pepper to taste

Directions:
1. Preheat oven to 400°F (200°C).
2. Cut the top off each artichoke and trim the sharp tips of the leaves. Steam artichokes until tender, about 30-40 minutes.
3. In a pot of boiling water, cook sweet potatoes until fork-tender, about 15-20 minutes. Drain well.
4. Mash sweet potatoes with coconut oil, salt, and pepper until smooth.
