Lamb and Mint Stew
Warm up with a hearty and fragrant stew that perfectly blends tender lamb with the freshness of mint.
Ingredients:
1 lb lamb stew meat, cubed
2 tbsp olive oil
1 onion, chopped
2 carrots, sliced
2 potatoes, diced
4 cups beef broth
1/4 cup fresh mint leaves, chopped
Salt and pepper to taste
Directions:
1. In a large pot, heat olive oil over medium-high heat. Add lamb cubes and brown on all sides.
2. Add chopped onions and sauté until translucent.
3. Stir in carrots and potatoes, cooking for another 5 minutes.
4. Pour in beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 hours until lamb is tender.
5. Season with salt and pepper to taste.
6. Just before serving, stir in fresh mint leaves for a burst of flavor.
