Lemon Garlic Shrimp with Spinach Orzo

Ingredients:
8 oz orzo pasta
1 lb large shrimp, peeled and deveined
3 tbsp olive oil
4 cloves garlic, minced
Zest of 1 lemon
Juice of 1 lemon
4 cups fresh spinach
Salt and pepper to taste

Directions:
1. Cook orzo pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
3. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
4. Stir in lemon zest and juice, then add fresh spinach. Cook until spinach is wilted.
