Lemon Olive Oil Cake

Ingredients:
– 1 1/2 cups (180g) all-purpose flour
– 1 1/2 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 3 large eggs
– 1 cup (200g) granulated sugar
– 1/2 cup (120ml) extra virgin olive oil
– 1/2 cup (120ml) whole milk
– Zest of 2 lemons
– Juice of 1 lemon
– 1 tsp vanilla extract

Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, beat eggs and sugar until pale and fluffy. Slowly drizzle in olive oil while mixing.
4. Stir in milk, lemon zest, lemon juice, and vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
