Mango Lime Cheesecake

Ingredients:
For the crust:
– 8 oz graham crackers, crushed
– 1/4 cup (4 tbsp) unsalted butter, melted
For the filling:
– 24 oz cream cheese, softened
– 1 cup sugar
– 1 cup mango puree
– Zest of 2 limes
– 3 eggs
– 1/2 cup sour cream
– 1/4 cup lime juice
For the topping:
– 1 cup whipped cream
– Fresh mango slices
– Lime zest
Directions:
1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
2. In a bowl, mix the crushed graham crackers and melted butter. Press into the bottom of the pan to form the crust.
3. In a large bowl, beat cream cheese and sugar until smooth. Add mango puree, lime zest, eggs, sour cream, and lime juice. Mix until well combined.
4. Pour the filling over the crust and smooth the top.
5. Bake for 50-60 minutes until the center is almost set. Turn off the oven and let the cheesecake cool inside for 1 hour.
6. Remove from the oven and let it cool completely. Chill in the refrigerator for at least 4 hours or overnight.
7. Before serving, spread whipped cream over the top and decorate with fresh mango slices and lime zest.
